Beef Wellington with spinach

Ingredients for 4 portions

1 Piece Puff pastry
1 Piece Pork loin roast
200 g Spinach (frozen)
3 Slice Ham
1 Piece Garlic clove
0.5 Tsp Salt
1 Pinch Nutmeg
1 Piece Egg
2 Tbsp Oil

Preparation

  1. First, thaw the spinach in a pot, peel the garlic clove and press it into the spinach, season with salt and nutmeg. Then let it simmer until all the liquid is gone and let it cool.
  2. Rinse the pork loin roast with cold water, remove the skins, season with salt and pepper and sear all around in a pan with some oil. Then let it cool well.
  3. Meanwhile, roll out the puff pastry, brush the edges with beaten egg, cover with the ham slices. Then spread the spinach on top, place the pork loin roast in the middle and wrap it with the dough.
  4. Place on a baking sheet lined with parchment paper. Brush the pastry crust with egg as well. Bake the meat in a preheated oven at 200°C (392°F) for 30 minutes in top/bottom heat.
