Roasted knuckle

Ingredients for 4 portions

1 Piece Pork knuckle
2 Tbsp Mustard
2 Tbsp Oil
4 Piece Garlic cloves
1 Pinch Pepper
1 Pinch Salt

Preparation

  1. Preheat the oven to 220 degrees Celsius. Cut the skin of the pork knuckle in a ring shape.
  2. Bring water to a boil in a large pot and cook the pork knuckle for 5 minutes. Remove and drain. Season the pork knuckle with salt. Mix mustard with oil, crushed garlic, and pepper to form a paste and rub the pork knuckle all around with it.
  3. Place the pork knuckle in a roasting pan, pour water around 1 cm high, and roast in the oven for about 25 minutes. Then reduce the temperature to 180 degrees and roast the pork knuckle until crispy.
