Pork roast American-style a la Pulled Pork

Ingredients for 4 portions

200 g Pork roast (cold)
200 ml Roasting fat
125 ml Water

Preparation

  1. First, slice the cold pork roast without rind into approximately 7mm slices, but against the normal short direction, leaving the long fibers intact. Then place the pieces in a freezer bag and pound them with a meat mallet with the rough side until the fibers separate.
  2. Next, heat up the roast fat with a little water and add the meat fibers, cook for about 5 minutes and turn off the heat. The roast fat will now completely soak into the meat as it cools, making it juicy but not mushy.
