Pork tenderloin with asparagus

70 min. total time

Ingredients for 4 portions

250 g Asparagus
250 g Cream Cheese (plain)
1 Bunch Herbs (Parsley, Basil, and Chives)
800 g Pork Tenderloin
2 Tbsp Breadcrumbs
1 Pinch Pepper
1 Pinch Salt

  1. Peel the asparagus and cut it into small pieces. Bring a pot of salted water to a boil and then let the asparagus cook for another 10 minutes over low heat.
  2. Cut the pork loin into two-finger-wide medallions and season well with salt and pepper on both sides. Then sear the medallions on both sides in a non-stick pan and set aside.
  3. Add the cream cheese, herbs, breadcrumbs, and a pinch of salt and pepper to a blender and puree the mixture. Now place the pork medallions in a baking dish and pour the pan juices over them. Add the cooked asparagus and spread everything with the cream cheese mixture. Then bake the dish at 150°C in the oven for about 15 minutes.
