Pork fillet in a potato puff pastry coat

Ingredients for 6 portions

1 Pk Puff pastry
450 g Pork loin roast
3 Pcs Potatoes, floury
50 g Bacon
1 Pcs Egg
1 Pcs Carrot
1 Tsp Parsley, chopped
1 Pinch Nutmeg
1 Tsp Salt
1 Pinch Pepper

Preparation

  1. Cook the potatoes in salted water until soft, peel them, and press them through a potato ricer while still warm.
  2. Cut the bacon into small cubes, sauté briefly, and mix into the potato mixture. Finely chop parsley, add diced carrots, season with salt, pepper, and grated nutmeg, and mix well.
  3. Season the beef loin with salt and pepper and sear on all sides. Roll out puff pastry and spread the potato mixture evenly on top. Place the meat in the center, fold the dough over from the two long sides to form a roll, and place on the baking paper.
  4. Bake in the oven at 170°C for about 30 minutes. Let rest for about 10 minutes (covered with aluminum foil) before serving!
