Grilled pork shoulder

Ingredients for 4 portions

1 kg Pork Shoulder Roast (Whole)
1 Tbsp Dijon Mustard
1 Tbsp Rosemary
1 tsp Paprika Powder
1 tsp Caraway Seeds
4 pcs Garlic Clove
80 ml Beer (Dark)
0.5 tsp Salt
4 Pinch Pepper

Preparation

  1. Prepare the grill for indirect grilling. Mix mustard with beer, rosemary, paprika powder and cumin to a thin seasoning paste. Peel garlic, press and stir into the paste.
  2. Rub the pork shoulder well with the seasoning paste, then season with salt and pepper to taste all around.
  3. Now grill at medium heat for about 1.5 hours (ideally measure the core temperature with a roasting thermometer, which should be 78° in the end). Slice and serve.
