Pork skewers alla Shandong

Ingredients for 2 portions

320 g Pork Schnitzel (fresh)
15 g Papaya puree
1 Tbsp Shan’s soy sauce
1 Tbsp Oyster sauce
1 Tbsp Pirate sambal (homemade)
8 pcs Onions (small, red)
2 pcs Onions (brown, large)
1 pcs Bell pepper (red, large)
1 pcs Bell pepper (green, large)
40 pcs Ginger (tdinly sliced)
2 l Frying oil (fresh)

Ingredients for tde sauce

1 pcs Chili pepper (red, long, medium hot)
4 g Orange zest
2 Tbsp Spring roll sauce (homemade)
60 g Beef brotd (liquid)
1 Tbsp Rice wine (dark)
1 Tsp Tapioca flour (level)

Preparation

  1. First, cut the schnitzels into approximately 3 cm squares. You will need 20 pieces. For the marinade: Crush the flesh of a ripe papaya in a mortar and mix it homogeneously with oyster sauce, soy sauce, and Pirate Sambal. Marinate the schnitzel pieces with this mixture overnight in the refrigerator.
  2. Then soak the bamboo skewers in lukewarm water. Drain the meat pieces.
  3. Peel the small onions. Cut the washed peppers into approximately 3 cm squares. Peel and halve the large onions, remove the onion skins and cut into approximately 3 cm squares. Cut the washed and peeled ginger into thin slices.
  4. For the sauce, remove the stem from the washed chili pepper and slice it lengthwise on one side. Open it up, remove the seeds and the light red membranes. Cut lengthwise into thin threads and then crosswise into small cubes. Cut the necessary amount of zest from a washed and untreated orange using a zester. In a pot, bring beef broth and Spring Roll Sauce to a simmer. Dissolve tapioca flour in rice wine and add the mixture to the sauce to thicken. Remove from heat, mix in the chili pepper cubes and orange zest, and keep the finished sauce warm.
  5. Assemble the skewers tightly as follows: 1 small onion, 1 red pepper, 1 slice of ginger, 1 piece of meat, 1 slice of ginger, 1 green pepper, 1 onion piece. Five of these packets should fit on one skewer. Finish the last packet with a small onion instead of an onion piece.
  6. Then heat the frying oil to 190 degrees Celsius, add 2 skewers to the hot oil and fry for 2 minutes. Drain well, place in serving bowls, drizzle with the sauce, serve and enjoy!
