Oven-baked gyros with Metaxa

Ingredients for 4 portions

800 g Pork loin roast
1 piece Red bell pepper, diced
200 g Mushrooms, cleaned and halved
3 tbsp Tomato paste
125 ml Olive oil
3 tbsp Gyro spice
100 ml Metaxa (Brandy)
125 ml Whipping cream
100 g Aged Gouda, grated
3 tbsp Olive oil for frying
1 Pinch Salt

Preparation

  1. For the Gyros from the oven with Metaxa, shred the pork tenderloin, mix olive oil with Gyros seasoning and mix into the shredded meat and let marinate for about 1 hour.
  2. Clean and halve the mushrooms and fry in hot oil for about 3 minutes, then remove from the pan.
  3. Add the Gyros meat and bell pepper to the frying fat and fry for about 8 minutes.
  4. Mix Metaxa and tomato paste, pour over the meat and bring to a boil once, season with salt.
  5. Stir in cream and cook briefly.
  6. Transfer everything to a baking dish, sprinkle with cheese and bake in a preheated oven for 10-15 minutes.
  7. Serve with rice or flatbread.
