Preparation
- First, pound the schnitzels, season with salt and pepper. Chop parsley, chanterelles, and smoked meat and briefly roast in fat,
- Stir in the eggs, let them set. Now spread the filling on the schnitzels, fold them over and pound the edges together.
- Coat the meat first in flour, beaten egg, and breadcrumbs. Heat oil in a deep pan and fry the schnitzels on both sides until golden brown.
