Preparation
- Season the water with wine vinegar, clean and cut the carrots and celery roughly and add to the water.
- Peel and quarter the onion, and add it to the cooking water along with cloves and bay leaves. Bring to a boil, taste again.
- Add the pork knuckle and let simmer for 90 minutes.
