Pullet Pork

Ingredients for 10 portions

2.5 kg Pork shoulder
150 ml Vegetable brotd
250 ml Apple juice
3 tbsp Sugar (brown)
4 tbsp Grill seasoning

Preparation

  1. First, mix the barbecue seasoning with 1 – 2 tbsp of sugar, it should taste sweet. Rub the roast well with this mixture, almost like massaging it. Then put it in a freezer bag, squeeze out all the air and refrigerate overnight.
  2. Preheat the oven to 110 – 130°C top/bottom heat and take the roast out of the refrigerator an hour before starting, it should be at room temperature.
  3. In the meantime, mix the apple juice, 1 – 2 tbsp of sugar, and the really strong broth. Take the roast out of its packaging and pour everything inside into the fruit juice mixture.
  4. Fill this mixture into a fireproof dish and place it under the roast in the oven. Now place the roast on the grill rack over the dish with the apple juice mixture, not too high, rather at the bottom of the oven.
  5. After 3 – 4 hours, occasionally brush or pour the roast with the liquid underneath. After about 6 hours, take it out of the oven and wrap it tightly in aluminum foil and then in towels.
  6. Let it rest for at least an hour. After the resting time, open the wrapping, add the collected liquid to the other sauce, heat it in a pot again and have it ready. Shred the roast with two forks.
