0.5 | pcs | Lemon (unpeeled) |

2 | tbsp | Clarified butter |
4 | pinches | Sugar |
200 | g | Oyster mushrooms |
Preparation
- Grate the zest of the lemon and squeeze the juice. Mix the lemon juice well with some sugar.
- If necessary, remove the silver skin from the pork loin roast, then rub with salt, pepper, and sugared lemon juice.
- Place slices of bacon next to each other on a piece of plastic wrap, so they are the same length as the pork loin roast. Then spread sage leaves on top and sprinkle with some lemon zest. Place the pork loin roast on top and roll the bacon around it.
- Heat clarified butter in a pan. Sear the pork loin roast in bacon from all sides for about 30 seconds, then remove and place in a roasting dish. Cook in the oven at 150°C (300°F) for 10-15 minutes.
- Clean the oyster mushrooms, slice them, and sauté in the pan with the drippings from both sides for 2 minutes, then lightly salt. Slice the cooked pork loin roast and serve with the oyster mushrooms.
