Pork loin roast in Parmesan breading

Ingredients for 2 portions

400 g Pork loin roast
8 Tbsp Parmesan (freshly grated)
6 Tbsp Breadcrumbs
1 Pc Egg
1 Tbsp Milk
0.5 Tsp Herb salt
500 ml Canola oil
4 Tbsp Flour (all-purpose)

Preparation

  1. First, trim and cut the washed pork loin into 2.5 cm thick slices, then season with herb salt.
  2. Mix the Parmesan with the breadcrumbs. Crack the egg and mix with the milk, add a little salt.
  3. Coat the meat slices first in flour, dip in the egg, and coat in the Parmesan breadcrumbs.
  4. Heat the rapeseed oil in a pan and fry the pork loin on both sides until golden brown. Drain on kitchen paper and serve immediately.
