Preparation
- First, peel and chop the carrots, onion, and celery, and simmer in a pot of water for about 15 minutes. Add orange and lemon slices.
- Season the meat with salt, pepper, and Dijon mustard. Heat oil in a pan and sear the meat on all sides. Deglaze with red wine and add vegetable broth, cream, and game seasoning.
- Transfer the meat to a baking dish, arrange the vegetables around it, and pour the sauce over everything. Bake at 160°C for 60 minutes, turning the meat and stirring the vegetables 2-3 times during cooking.
