Mushroom cream schnitzel

Ingredients for 4 portions

500 g brown mushrooms
600 g pork schnitzel meat
1 pc onion
200 ml clear soup
0.5 tsp salt
2 pinch pepper
2 tsp plain flour
1 cup whipping cream
2 tbsp rapeseed oil

Preparation

  1. Peel and chop the onion. Clean the mushrooms and slice them. Season the meat with salt and pepper.
  2. Heat the oil in a deep pan, sear the meat on both sides, and remove from the pan. Sauté the onion until light brown in the remaining oil, add the mushrooms and continue cooking. Pour in the broth, add the meat back in, and simmer until tender, stirring occasionally.
  3. Once the meat is tender, dust with flour, simmer for 5 minutes, and add the cream. Taste again before serving.
