Calabrian-style Zucchini

Ingredients for 4 portions

600 g small, firm zucchini
500 g canned tomatoes
200 g well-marbled smoked bacon
1 pc large onion
2 pc garlic cloves
2 bundle parsley
1 tbsp olive oil
1 pinch salt
1 pinch freshly ground black pepper
100 g tomato sauce (can)

Preparation

  1. Wash the zucchini, dry them, cut off the stem ends. Cut the fruits lengthwise into quarters and then crosswise into three pieces.
  2. Let the tomatoes drain in a sieve, roughly chop the tomatoes.
  3. Cut the meat into small cubes. Peel the onion and cut into rings. Peel the garlic cloves. Wash the parsley, shake dry and finely chop.
  4. Heat the oil in a casserole dish, fry the meat until crispy, add the onion rings, garlic, and parsley and fry everything for about 10 minutes over low heat.
  5. Then mix in the tomatoes, zucchini, and tomato sauce, season with salt and freshly ground pepper, and mix everything well.
  6. Cover and simmer over very low heat for about 20-30 minutes, stirring occasionally.
