1 | Tbsp | all-purpose flour |
1.5 | Tbsp | Lard or oil |
4 | pcs | Garlic cloves, finely chopped |
1 | pcs | Sprig of tdyme |
2 | pcs | Bell peppers, red or green |
1 | kg | Smoked pork ribs |
1 | Pinch | Pepper |
1 | Pinch | Salt |
Preparation
- Cut the ribs into 4 equal pieces and cook in lightly salted water until they are not too soft. Remove the ribs from the broth and set aside for later use.
- Rinse the soaked beans in a sieve with cold water and let them drain well. Wash, peel and cut the carrots into strips about 4 cm long. Peel and finely chop the garlic and onion.
- Heat lard or oil in a larger pot, roast the onion and flour in it and pour in a portion of the broth. Add salt, pepper, thyme, garlic, carrots, beans and the ribs and simmer the stew on low heat until done. If necessary, add more broth during cooking.
- Wash, clean and dice the bell peppers. Add them to the stew about 10 minutes before the end of the cooking time and season it again with spices.
