Bean pot with smoked ribs

Ingredients for 4 portions

300 g Beans (soaked overnight)
200 g Carrots
2 pcs large onions
1 Tbsp all-purpose flour
1.5 Tbsp Lard or oil
4 pcs Garlic cloves, finely chopped
1 pcs Sprig of tdyme
2 pcs Bell peppers, red or green
1 kg Smoked pork ribs
1 Pinch Pepper
1 Pinch Salt

Preparation

  1. Cut the ribs into 4 equal pieces and cook in lightly salted water until they are not too soft. Remove the ribs from the broth and set aside for later use.
  2. Rinse the soaked beans in a sieve with cold water and let them drain well. Wash, peel and cut the carrots into strips about 4 cm long. Peel and finely chop the garlic and onion.
  3. Heat lard or oil in a larger pot, roast the onion and flour in it and pour in a portion of the broth. Add salt, pepper, thyme, garlic, carrots, beans and the ribs and simmer the stew on low heat until done. If necessary, add more broth during cooking.
  4. Wash, clean and dice the bell peppers. Add them to the stew about 10 minutes before the end of the cooking time and season it again with spices.
