  • 4 flour tortillas
  • 2 cups shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers
  • 2 cloves garlic, minced
  • 1/2 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • Salt and pepper to taste


  1. In a pan, heat olive oil over medium heat.
  2. Add the onion, bell peppers, and garlic, then sauté until soft.
  3. Add shredded chicken to the pan and season with salt and pepper. Cook until warmed through.
  4. On a clean flat surface, spread out the tortillas.
  5. On one half of each tortilla, layer the Monterey Jack cheese, chicken mixture, then the cheddar cheese.
  6. Fold over the other half of the tortilla to create a half-moon shape.
  7. Heat a clean skillet over medium heat, then cook each quesadilla until golden brown and the cheese is melty, about 3 minutes per side.
  8. Slice into wedges and serve warm, garnished with fresh cilantro.
