Aromatic Char-Grilled Caucasus Kebabs

A trip to the Caucasus region wouldn’t be complete without tasting the traditional dish of Shashlik. Marinated in a savory blend of spices, herbs, and wine, these char-grilled kebabs bring out the flavors of the lamb in the most mouthwatering way. This authentic dish is a hallmark of Caucasus cuisine, loved for its simplicity and the robust flavors it imparts to the meat.

Ingredients:

  • 2 lbs boneless lamb shoulder
  • 3 onions, chopped
  • 3 cloves garlic, minced
  • 1 cup dry red wine
  • 2 tablespoons vinegar
  • 2 tablespoons tomato paste
  • 1/2 cup olive oil
  • 1 tablespoon paprika
  • 1 tablespoon coriander
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Directions:

  1. Cut the lamb shoulder into 1-inch cubes and place them in a large bowl.
  2. Add the chopped onions, minced garlic, red wine, vinegar, tomato paste, olive oil, paprika, coriander, salt, and pepper. Mix well.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight to marinate.
  4. Preheat your grill to high heat.
  5. Thread the marinated lamb pieces onto skewers, leaving a small space between each piece.
  6. Grill the skewers for about 10-15 minutes, turning occasionally, until the lamb is charred and cooked to your liking.
  7. Serve the shashlik garnished with fresh parsley.
