Preparation
- Put pork knuckle with finely chopped vegetables and spices in a pot with cold water, bring to a boil and let simmer on low heat for at least 2.5 hours.
- Then remove the cooked meat from the soup and separate it from the bone. Strain the soup through a sieve into a new pot.
- Mix flour with water and cook it in the strained soup, season and finally taste.
- Refine the soup with white wine and add the finely chopped meat back in.
