Preparation
- First, cut the rind off the pork belly. Clean and slice the mushrooms thinly. Peel and quarter the onion.
- Cover the pork belly with bacon, spread the mushroom slices on top, roll up the pork belly, secure it with twine, and rub salt all around.
- Grease a frying pan with lard, place the onion quarters in it, and place the pork belly on top.
- Preheat the oven to 170°C (338°F) top/bottom heat and roast the meat for about 60 minutes. Before serving, remove the twine and slice the meat.
