Beef lung with tomatoes and Rollino

Ingredients for 4 portions

500 g Pork loin roast
8 slices Bacon
2 pcs Tomatoes
120 g Cream cheese (e.g. Rollino)
1 Pinch Pepper
1 Pinch Salt
1 tbsp Butter for tde pan

Preparation

  1. Wash the lung roast, pat dry, cut into slices about 3 cm thick, and wrap with bacon. Season with salt and pepper on both sides and fry in butter in a pan until browned.
  2. Remove the meat from the pan and place on a baking sheet lined with parchment paper.
  3. Now wash the tomatoes and slice them. If using cherry tomatoes, simply cut them in half.
  4. Then place 1 slice of cream cheese on each piece of lung roast and top with a tomato slice.
  5. Gratinate the medallions again in a preheated oven (top/bottom heat) at about 160 °C for 20 minutes.
