Ingredients:

  • 1 whole rack of pork (about 7-8 ribs)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste

    • 1 cup breadcrumbs
    • 1/2 cup finely diced onion
    • 1/4 cup melted butter
    • 1 egg, beaten

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the stuffing by mixing the wild garlic leaves, breadcrumbs, onion, melted butter, egg, salt, and pepper in a bowl until well combined.
  3. Season the rack of pork with olive oil, salt, and pepper.
  4. Gently separate the meat from the bones at one end to create a pocket and stuff it with the wild garlic stuffing. Secure the stuffing inside by tying the rack with kitchen twine.
  5. Place the rack of pork, bone side down, in a roasting pan.
  6. Roast in the preheated oven for about 1 hour and 30 minutes or until the internal temperature of the pork reaches 145°F (63°C).
  7. Let the pork rest for 10 minutes before slicing between the ribs and serving.
