Preparation
- Preheat the oven to 180 degrees Celsius. Cut the cleaned pork fillet into medallions, season with salt, pepper, and spread with mustard.
- Wrap each medallion with 2 strips of bacon and place in a baking dish. Then chop the washed parsley.
- In a bowl, mix cream, sour cream, curry, tomato paste, and parsley until smooth, season with salt and pepper, and pour over the medallions. Roast in the preheated oven for about 25-30 minutes.
